Gouges are hollow bladed chisels. They are used for hollowing cups, troughs and bowls but also for wood carvings and moldings. Cutting with gouges can be done by hand or with a mallet.
Straight gouges are best suited for carvings and for shallow bowls or plates.
Bent gouges make it easier to work deep bowls.
